To make the salsa, mix all the ingredients in a bowl and season with salt. Leave to marinate.
Heat a large heavy-based frying pan or griddle over a high heat until smoking. Rub the steaks with 2-3 tsp oil and season well with salt. Once the pan is ready, fry the steaks for 2-3 minutes each side, ensuring all cut sides are browned, pressing down with a spatula as they cook (2 minutes for rare, 3 for medium). Transfer to a plate to rest for 2 minutes.
Stir the coriander through the salsa and taste. Depending on the strawberries, you might need to add a little more sugar. Serve the steaks with the salsa and chips, if using, with the salad on the side, if liked.
For successful searing it’s best to give meat room in the pan, particularly steaks. If the pan won’t fit all 4 at once, cook in batches.
