Smoky beef & black bean stew with dumplings

Ingredients

  • 1 tbsp sunflower oil
  • 1 red onion, chopped
  • 1 red pepper, deseeded and diced
  • 350g pack Cooks’ Ingredients Sweet Potato & Butternut Squash
  • 385g pack slow cooked smoky chipotle beef
  • 420g can Essential Black Beans In Water
  • 400g can chopped tomatoes
  • ½ x 95g jar Cooks’ Ingredients Smoky Chipotle Paste, to taste
  • 125g self-raising flour
  • ½ tsp salt
  • 60g shredded suet
  • 195g can Essential Sweetcorn, drained

Method

  1. Heat the oil in a large flameproof casserole over a medium heat. Add the onion, pepper and sweet potato and butternut mix, then cook for 5 minutes until starting to soften.

  2. Tip the juices from the beef into the casserole, then roughly cube the meat. Add to the pan with the beans and their water, the tomatoes and chipotle paste. Season, bring to a simmer, then cover and cook for 15 minutes more. Stir in the sachet of sauce.

  3. Meanwhile, preheat the oven to 200ºC, gas mark 6. Mix the flour and salt together in a large bowl. Stir in the suet and sweetcorn, then mix in 4 tbsp cold water. Roll the mixture into eight even-sized balls.

  4. Put the dumplings on top of the stew and bake, uncovered, for 15-20 minutes, until the dumplings are puffed and light golden brown.

Cook’s tip

If liked, add a handful of grated mature Cheddar or some finely chopped herbs such as chives or parsley to the dumpling mix.
