Ingredients

  • 500g pack British Diced Pork Shoulder
  • 2 tbsp Cooks’ Ingredients Gochujang Chilli Paste
  • 2 tbsp Vegetable oil
  • 1 onion, finely sliced
  • 400g baby new potatoes, halved (quartered if large)
  • 2 clove/s garlic
  • 2 tsp Cooks’ Ingredients Nam Pla Fish Sauce
  • 250g Vadasz Raw Kimchi
  • 1 tbsp light soya sauce
  • 2 salad onions, finely sliced

Method

  1. In a bowl, toss the pork with the gochujang paste and season. Cover and marinate in the fridge for 30 minutes if you have time.

  2. Heat the oil in a large casserole dish over a high heat. Add the marinated pork and fry for 4-5 minutes until browned in places, then tip in the onion and fry, stirring regularly, for another 5 minutes.

  3. Add the potatoes and 500ml water, cover with a lid and bring to a gentle simmer; cook for 15 minutes.

  4. Add the garlic, fish sauce and kimchi to the pan and simmer, uncovered, for another 20 minutes. Check that the meat and potatoes are tender with no pink meat remaining; if not, simmer for another 5 minutes. Stir in the soy sauce and salad onions and serve.

Cook’s tip

Gochujang chilli paste

This Korean staple has a savoury, mildly spicy flavour. Use to marinate chicken, fry with pork mince to serve in lettuce wraps or add to noodles for extra oomph.
