Strawberry ice cream sandwiches

A dash of balsamic vinegar is the secret ingredient in these knockout ice cream sandwiches. They’re the perfect treat at a barbecue or garden party.

Ingredients

  • 200g strawberries, sliced
  • 1 tbsp balsamic vinegar
  • 2 tsp caster or light brown soft sugar (or maple syrup)
  • 4 brioche buns (toasted, if liked)
  • 8 scoops Carte D’Or Madagascan Vanilla Ice Cream

Method

  1. Put the sliced strawberries in a bowl with the vinegar, sugar and a small pinch of salt. Toss together and leave to macerate for 30 minutes, stirring halfway.

  2. Split open the brioche buns and divide the strawberries between the bases. Top each with 2 scoops of vanilla ice cream, then drizzle over the strawberry macerating juices and top with the bun lids. Serve immediately.

Cook’s tip

You can easily scale this recipe up or down. If you’re feeding a crowd, pre-scoop the balls of ice cream on to a tray and leave in the freezer until ready to serve.
