Sweet potato röstis & smoked mackerel

Crisp homemade rӧsti and rich smoked fish are a great match with fiery horseradish beets, especially when dressed with cooling yogurt and a squeeze of lemon.

Ingredients

  • 400g sweet potatoes, scrubbed, skins left on, coarsely grated
  • 1 bunch Essential Salad Onions, finely chopped, green and white parts separated
  • 75g plain flour
  • 75ml olive oil
  • 180g pack baby beetroot with horseradish, chopped
  • 3 tbsp Essential Greek Style Yogurt
  • 1 unwaxed lemon, zest, juice of ½, the rest in wedges
  • 150g Essential Smoked Mackerel Fillets, skinned
  • 50g watercress

Method

  1. Mix the sweet potatoes and white parts of the salad onions with a pinch of salt. Scrunch together to release some moisture, then stir in the flour to create a thick, pliable mixture.

  2. With wet hands, divide the mixture into 4 patties, around 2cm thick. Pour 1cm oil into a large frying pan over a medium-high heat. Add the patties and cook for 3-4 minutes each side, until golden and crisp. Drain on kitchen paper.

  3. Meanwhile, mix the green parts of the salad onions, the beetroot, yogurt, lemon zest and juice together in a bowl with a pinch of ground black pepper.

  4. Put the röstis on 2 plates, spoon over the creamy horseradish beets and flake the mackerel over the top. Add the watercress and the lemon wedges, then serve.

Cook’s tip

These potato röstis are also delicious with a weekend fry-up. For a cheat’s version, try a 300g pack potato röstis, cooked according to pack instructions.
