Tahini winter slaw

Ingredients

  • 1 tbsp olive oil
  • 1 clove/s garlic, peeled and bashed
  • 2 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • 3 salad onions, thinly sliced
  • 5 Cooks' Ingredients Tahini
  • 1 tsp sea salt flakes
  • unwaxed limes, zest and juice
  • ½ savoy cabbage (about 350g), finely shredded

Method

  1. Heat the oil in a frying pan and fry the garlic until the oil starts to bubble and the garlic colours a little, then add all the sesame seeds and mix to toast until the white seeds are golden all over. Add the salad onions and remove from the heat straight away. Mix well, then discard the garlic. Transfer ½ of the toasted sesame mixture to a large bowl, reserving the rest.

  2. Add the tahini, salt, and lime zest and juice to the large bowl with a little freshly ground black pepper and 5 tbsp water. Whisk into a creamy dressing, adding more water if needed. Add the cabbage; massage with your hands for 1 minute, until coated and slightly softened. Transfer to a serving bowl and sprinkle the reserved seed mixture over the top.
