Tear & share Hedgehog-style wild garlic bread

Tear & share Hedgehog-style wild garlic bread

This hot, buttery and cheesy pull-apart bread is fabulous for sharing and has the social media world in raptures. You can use pretty much any crusty loaf, and can add chopped fresh or dried herbs; chilli; black garlic; or miso to the butter, amongst other things, to vary the results.

Ingredients

  • 500g loaf No.1 White (or 5 Seeds White) Sourdough
  • 80g Essential Salted Dairy Butter, softened
  • 1 Large pinch dried chilli flakes (optional)
  • 50g frozen Cooks’ Ingredients Wild Garlic, defrosted
  • ½ x 250g pack Grated Cheddar & Mozzarella

Method

  1. Preheat the oven to 190ºC, gas mark 5. Make slashes in the loaf in a cross-hatch pattern, cutting almost down to the base of the loaf and spacing the cuts around 2cm apart. Place the loaf on a large piece of foil.

  2. Mix together the butter, chilli, if using, wild garlic and cheese. Press the mixture into the cuts in the bread.

  3. Fold the foil round the loaf, place into the oven and bake for 20-25 minutes, opening up the foil for the last 5 minutes, until the cheese has melted and the top is crunchy. Serve warm.
