Ingredients

  • 2 x 250g packs jasmine rice
  • 4 tsp Thai red curry paste
  • tbsp fish sauce
  • 2 tsp maple syrup
  • 300g cooked king prawns
  • 1 cucumber, halved lengthways, seeds removed, finely sliced
  • 3 carrots, peeled and pared into strips (or julienned) with a peeler
  • 2 shallots, finely sliced
  • 80g dry roasted peanuts, roughly chopped
  • 20g pack Thai basil, leaves shredded
  • 2 limes, juice

Method

  1. Preheat the oven to 220ºC, gas mark 7. Heat the rice in the microwave according to pack instructions. Put in a bowl with the curry paste and ½ tbsp fish sauce. Toss together (it’s fine to have some clumpy bits), then spread over a large baking tray and bake for 20 minutes, stirring halfway.

  2. Meanwhile, in a small bowl, mix the remaining 1 tbsp fish sauce, the lime juice and maple syrup to make a dressing. In a large mixing bowl or on a platter, combine the prawns, cucumber, carrots and shallots.

  3. Add the rice to the bowl or platter, pour over the dressing and toss everything together. Stir through the peanuts and most of the basil leaves; scatter over the remaining basil and serve.
