Ultimate salt beef sandwiches

Ingredients

  • 440g pack Waitrose & Partners Slow Cooked Salt Beef with a Mustard Tartar Sauce
  • 1 tbsp salted butter, softened
  • 8 slice/s white bloomer
  • 4 slices Emmi Raclette Pure Classic Swiss cheese
  • 4 pickled cucumbers, halved lengthways

SWEET MUSTARD

  • ½ tsp Colman’s Original Mustard Powder
  • ½ tsp ground turmeric
  • 1 tbsp wholegrain mustard
  • 1 tbsp honey
  • 1 tbsp white wine or cider vinegar
  • 1 tsp salt

Method

  1. Prepare the salt beef according to pack instructions, then gently shred the meat with two forks.

  2. Butter the outsides of 2 slices of bread and sandwich them together with a slice of cheese in the middle. Heat a griddle pan until hot, then griddle the sandwich on both sides, until the cheese has melted slightly.

  3. Meanwhile, mix together all the sweet mustard ingredients. Open up the sandwich, put 2 pickled cucumber halves on top of the cheese and drizzle over the mustard sauce. Pile on 1⁄4 of the warm salt beef. Top with the other slice of toast and repeat with the remaining ingredients to make 3 more sandwiches.

Cook’s tip

Use the mustard sauce from the pack of salt beef if you’re short on time, or save it for a bacon sandwich on another day.
