Preheat the oven to 200ºC, gas mark 6. Tip the winter vegetables into a medium roasting tin, then add the sausages, snipped into big chunks with kitchen scissors, and roast for 30 minutes.
Turn everything halfway and add 2-3 tbsp dressing towards the end of cooking time. The sausages should be cooked through with no pink meat and everything else golden and sticky.
In a large salad bowl, dress the watercress with about 1 tbsp more dressing, tumble in the warm vegetables and sausages, then serve.
