Ingredients

  • ½ x 650g pack frozen Mediterranean Style Vegetables
  • 270g pack Easy To Cook Garlic & Herb Chicken Breasts
  • 300g wheatberries, lentils & green vegetables
  • 2 tbsp ZOE Daily30+

Method

  1. Preheat the oven to 200ºC, gas mark 6. Tip half of the Mediterranean vegetables pack into a roasting tin. Roast for 10 minutes, then stir the vegetables well and add 50ml boiling water. Top with the chicken and any marinade and continue to roast for 25 minutes, until the chicken is thoroughly cooked, the juices run clear and there is no pink meat.

  2. Meanwhile, cook the wheatberries according to pack instructions, and mix with most of the ZOE Daily30+.

  3. Divide the grains between plates and top with the roasted vegetables and chicken, sprinkling over the remaining ZOE Daily30+ to serve.
