Ingredients

  • 300g pack wheatberries, lentils & green vegetables
  • 2 mandarins
  • 330g pack Waitrose No.1 Greek Barrel-Aged Feta
  • 90g pack pomegranate

Method

  1. Cook the grains according to pack instructions, then transfer to a large salad bowl.

  2. Meanwhile, peel the mandarins, cut into 3 thick horizontal slices, then season with freshly ground black pepper. Heat a frying pan with a dash of olive oil and sear the cut sides of the mandarins until golden. Transfer to the bowl of grains. Return the pan to the heat with a generous drizzle of oil.

  3. Pat the feta dry with kitchen paper, then crumble into the pan in large chunks. Fry for a couple of minutes until golden, then flip and cook until golden all over. Fold through the grains. Toss in half the pomegranate seeds.

  4. Divide between plates, top with the remaining pomegranate, add a drizzle more olive oil and serve.
