Place a wok or large, deep frying pan over a high heat. Add the groundnut oil and heat through for a few seconds, then add the garlic and ginger, stir-frying for 30 seconds to flavour the oil (it should start to smell fragrant).
Throw the brussels sprouts into the pan and stir-fry briskly for 1 minute, until lightly charred, then add in 100ml hot water, bring to the boil and crumble in half the stock cube and stir to dissolve. Cover with a lid, and turn the heat down low, and let cook for 2-3 minutes more, until the brussels are cooked through, with a little bite. Once cooked, season with the soya sauce and a little salt. Remove the pan from the heat. Finish with sesame seeds and serve straight away as a side dish or with rice or noodles as a main course.
Top with a crispy fried egg and some chilli oil on rice for the perfect mid week meal.
