Ingredients

  • 2 tbsp groundnut oil
  • 5 clove/s garlic, thinly sliced
  • 15g fresh root ginger, cut into matchsticks
  • 350g brussels sprouts, trimmed and halved
  • ½ vegetable stock cube
  • 2 tsp sesame seeds
  • 1 tbsp light soya sauce
  • 1 tbsp maple syrup or sugar
  • 1 pinch/es salt, plus more to taste

Method

  1. Place a wok or large, deep frying pan over a high heat. Add the groundnut oil and heat through for a few seconds, then add the garlic and ginger, stir-frying for 30 seconds to flavour the oil (it should start to smell fragrant).

  2. Throw the brussels sprouts into the pan and stir-fry briskly for 1 minute, until lightly charred, then add in 100ml hot water, bring to the boil and crumble in half the stock cube and stir to dissolve. Cover with a lid, and turn the heat down low, and let cook for 2-3 minutes more, until the brussels are cooked through, with a little bite. Once cooked, season with the soya sauce and a little salt. Remove the pan from the heat. Finish with sesame seeds and serve straight away as a side dish or with rice or noodles as a main course.

Cook’s tip

Top with a crispy fried egg and some chilli oil on rice for the perfect mid week meal.
