Sweet potato mash with soy sauce and salad onions

Serves: 4 as a side
4 large sweet potatoes, peeled
1 tbsp sesame seeds
40g unsalted butter
2½ tbsp soy sauce
3 salad onions, finely sliced
1. Roughly chop the sweet potatoes and put in a pan of salted water. Bring to the boil, then reduce the heat and simmer for 20-25 minutes, until tender. Meanwhile, toast the sesame seeds in a dry pan until fragrant (1-2 minutes).
2. Drain the potatoes, then return to the hot pan with the butter and soy sauce; mash until smooth. Taste and season if needed. Stir through the salad onions and scatter the rest over the top with the sesame seeds. Serve with sausages and broccoli, if liked.
